Easy Creamy Iced Pumpkin Chai Latte with Oat Milk

A quick and easy iced pumpkin chai latte made with steamed oat milk, pumpkin puree, and chai concentrate. Creamy, spicy, and perfectly balanced for fall mornings or afternoons.

  • 2 tablespoons pumpkin puree (100% pure, not pumpkin pie filling)
  • ½ cup chai concentrate (store-bought, like Tazo or Oregon Chai)
  • 1 cup oat milk (barista edition preferred, but any unsweetened works)
  • 1 to 2 tablespoons maple syrup (to taste)
  • ½ teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice (plus extra for garnish)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • Ice (enough to fill glass)
  • Optional garnish: cinnamon stick, star anise, or coconut whipped cream

Instructions

  1. In a small bowl or liquid measuring cup, combine pumpkin puree, chai concentrate, maple syrup, vanilla extract, pumpkin pie spice, ground cinnamon, and salt. Whisk until completely smooth and no lumps remain.
  2. Pour oat milk into a small saucepan. Heat over medium-low heat, whisking constantly, until hot but not boiling (around 150°F). Whisk vigorously for 2-3 minutes until frothy and slightly thickened.
  3. Remove from heat and let the steamed oat milk cool for about 2 minutes.
  4. Fill a serving glass with ice cubes (large cubes preferred).
  5. Pour the pumpkin-chai mixture over the ice.
  6. Slowly pour the cooled steamed oat milk over the back of a spoon into the glass to create layers.
  7. Stir gently with a long spoon to combine. Garnish with a sprinkle of pumpkin pie spice or cinnamon, and add a cinnamon stick or star anise if desired.
  8. Taste and adjust sweetness or spice as needed.

Notes

For a caffeine-free version, use rooibos chai. For a nut-free option, oat milk is naturally nut-free. To reduce sugar, use unsweetened oat milk and reduce maple syrup. The pumpkin-chai base can be made ahead and stored in the fridge for up to 5 days. Do not skip steaming the oat milk for the best creamy texture.
