  • 2 pounds boneless, skinless chicken breasts (about 45 breasts)
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter (1 stick)
  • 1 packet ranch dressing mix (about 1 ounce)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 to 16 slider buns (Hawaiian rolls recommended)
  • 1/2 cup blue cheese crumbles (optional)
  • Ranch or blue cheese dressing (for serving)
  • Celery sticks and carrot sticks (for serving)

Instructions

  1. Season and sear the chicken. Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper. Heat a large skillet over medium-high heat and add a tablespoon of oil. Sear the chicken for 3-4 minutes per side, until golden brown. Don’t worry about cooking it through—it will finish in the crockpot.
  2. Make the buffalo sauce. In a small bowl, whisk together the Frank’s RedHot, melted butter, ranch dressing mix, garlic powder, and onion powder until smooth.
  3. Combine in the crockpot. Place the seared chicken breasts in the bottom of the crockpot. Pour the buffalo sauce mixture over the top, making sure each piece is coated.
  4. Cook low and slow. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. The chicken is done when it’s tender enough to shred easily with a fork.
  5. Shred the chicken. Remove the chicken from the crockpot and place it on a cutting board. Use two forks to shred it into bite-sized pieces.
  6. Return to the sauce. Put the shredded chicken back into the crockpot and stir to coat it evenly with the sauce. Let it cook on LOW for another 15-20 minutes to let the flavors meld.
  7. Toast the buns (optional but recommended). While the chicken finishes, split your slider buns and toast them under the broiler for 1-2 minutes, or until lightly golden.
  8. Assemble the sliders. Place a generous scoop of the buffalo chicken on the bottom half of each bun. Top with blue cheese crumbles if using, and a drizzle of ranch or blue cheese dressing. Add the top bun and serve immediately.
