Easy Crockpot Garlic Cream Cheese Mashed Potatoes

These incredibly creamy, hands-off mashed potatoes are made entirely in the crockpot with just five simple ingredients. Perfect for busy weeknights or holiday dinners, they deliver velvety, garlicky comfort without any boiling, draining, or fussing.

  • 3 pounds Yukon Gold potatoes, peeled and halved
  • 8 ounces cream cheese, softened and cubed
  • 4 tablespoons unsalted butter, cubed
  • 4–6 cloves garlic, minced
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼–½ cup milk or heavy cream (optional, for adjusting consistency)

Instructions

  1. Prep the Potatoes: Peel the potatoes and cut them in half (quarter any large ones for even cooking). Rinse under cold water to remove excess starch, then pat dry.
  2. Load the Crockpot: Place the halved potatoes in a 6-quart crockpot. Add the cubed cream cheese, cubed butter, minced garlic, 1 teaspoon salt, and ½ teaspoon pepper. Stir gently to distribute.
  3. Cook: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until potatoes are fork-tender.
  4. Stir and Mash: Turn off the crockpot (or switch to warm). Mash the potatoes right in the crockpot using a potato masher, sturdy fork, or wooden spoon until smooth and creamy.
  5. Adjust Consistency: If desired, stir in ¼-½ cup milk or heavy cream to reach your preferred texture. Taste and adjust salt and pepper as needed.
  6. Serve: Transfer to a serving bowl, top with a pat of butter, fresh chives, or extra pepper, and serve hot.

Notes

For best results, use full-fat cream cheese and Yukon Gold potatoes. Do not overmix to avoid gummy texture. Potatoes can be kept on ‘warm’ for up to an hour. Leftovers can be refrigerated for up to 4 days; reheat in microwave or on stovetop with a splash of milk.
