  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/3 cup (110g) honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 45 cloves garlic, minced
  • 2 tablespoons (30g) ketchup
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil (optional)
  • 1 tablespoon (8g) cornstarch
  • 2 tablespoons cold water
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels and trim excess fat if desired. Place in a single layer in the crockpot.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil. Adjust sweetness or saltiness to taste.
  3. Pour the sauce evenly over the chicken. Use tongs to flip each piece and coat all surfaces.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
  5. Remove chicken to a plate and cover with foil. Pour the cooking liquid into a small saucepan.
  6. In a separate bowl, mix cornstarch with 2 tablespoons cold water to make a slurry. Bring the sauce to a simmer over medium heat, then whisk in the slurry. Cook for 1-2 minutes until thickened.
  7. Return chicken to the crockpot or pour thickened sauce over chicken on a serving platter. Garnish with sliced green onions and sesame seeds. Serve immediately over rice, noodles, or steamed vegetables.

Notes

For best results, use boneless, skinless chicken thighs and cook on low. Pat chicken dry to avoid watery sauce. If using frozen thighs, add 1-2 hours to cooking time. For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
