Easy Crockpot Lasagna Soup with Italian Sausage

This cozy crockpot lasagna soup has all the soul of the classic dish without the fuss. Just toss everything in the slow cooker and let it work its magic for a bowl of pure comfort.

  • 1 pound mild or spicy Italian sausage (casings removed)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 bay leaf
  • 8 ounces dried lasagna noodles, broken into 1–2 inch pieces
  • 1 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Remove the casings from the Italian sausage and break it into small chunks.
  2. Add the sausage chunks, diced onion, minced garlic, crushed tomatoes, diced tomatoes (with their juice), chicken broth, tomato paste, oregano, basil, salt, pepper, red pepper flakes (if using), and bay leaf to the slow cooker. Stir to combine.
  3. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. About 30 minutes before serving, use two forks to break the sausage into smaller, bite-sized pieces.
  4. Stir in the broken lasagna noodles, making sure they are fully submerged. Cover and cook on HIGH for 15-20 minutes, or until the noodles are tender but still al dente.
  5. While the noodles cook, mix the ricotta, mozzarella, and Parmesan in a small bowl. Set aside at room temperature.
  6. Remove the bay leaf from the soup. Ladle the hot soup into bowls. Top each serving with a generous dollop of the ricotta mixture. Sprinkle with fresh parsley if desired. Serve immediately.

Notes

Don’t add the noodles too early or they will become mushy. For more depth, brown the sausage before adding to the crockpot. Use low-sodium broth to control saltiness. Remove the bay leaf before serving. The soup thickens as it sits; add a splash of broth when reheating.
