  • 8 oz block cream cheese, softened and cubed

  • 34 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients: Slice smoked sausage into 1/2-inch rounds. Peel and cube russet potatoes into 1-inch pieces. Dice onion and mince garlic. Cube cream cheese into small squares and let soften at room temperature.
  2. Layer ingredients in the crockpot: Place cubed potatoes in the bottom. Add sliced sausage, diced onion, and minced garlic on top.
  3. Add liquid: Pour 4 cups low-sodium chicken broth over everything. Season with a pinch of black pepper. Do not stir.
  4. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until potatoes are fork-tender.
  5. Add cream cheese: About 30 minutes before serving, add cubed, softened cream cheese. Stir gently until completely melted and broth is creamy (3-5 minutes).
  6. Finish and serve: Taste and adjust seasoning with salt and pepper. Ladle into bowls and garnish as desired.

Notes

For best texture, use full-fat block cream cheese and add it at the end to prevent curdling. If soup is too thin, mash some potatoes against the side of the crockpot to thicken. For extra flavor, brown the sausage in a skillet before adding to the crockpot.
