Easy Crockpot Taco Soup: Best Set-It-and-Forget-It Recipe

This easy crockpot taco soup is the ultimate set-it-and-forget-it meal. With just 10 minutes of prep, your slow cooker does all the work, delivering a warm, hearty, and flavorful soup that’s perfect for busy weeknights.

  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (14.5 ounces) diced tomatoes (fire-roasted preferred), undrained
  • 1 can (10 ounces) Rotel tomatoes with green chilies, undrained
  • 2 cups beef broth (low-sodium preferred)
  • Optional toppings: shredded cheddar cheese, sour cream, fresh cilantro, diced avocado, sliced jalapeños, crushed tortilla chips

Instructions

  1. Brown the ground beef and onions: Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking the meat up with a wooden spoon, until the beef is browned and the onion is soft, about 6-8 minutes.
  2. Add the garlic: Stir in the minced garlic and cook for one more minute until fragrant.
  3. Transfer to the slow cooker: Using a slotted spoon, transfer the beef and onion mixture to a 6-quart slow cooker.
  4. Add the seasoning: Sprinkle the packet of taco seasoning over the beef in the slow cooker and stir to coat evenly.
  5. Add the canned ingredients: Add the diced tomatoes (with juice), Rotel tomatoes (with juice), rinsed black beans, rinsed kidney beans, and drained corn to the slow cooker.
  6. Pour in the broth: Pour the 2 cups of beef broth over everything and stir to combine.
  7. Set it and forget it: Put the lid on the slow cooker. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  8. Finish and serve: Once cooking time is up, stir the soup. Taste and adjust seasonings if needed. Ladle into bowls and top with desired toppings.

Notes

For a thicker soup, mash some beans against the side of the slow cooker before serving or mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in 30 minutes before serving. This soup freezes well for up to 3 months. Leftovers keep in the refrigerator for up to 5 days.
