A simple, crustless breakfast casserole packed with eggs, spinach, and feta cheese. Perfect for meal prep, it’s quick to assemble and reheats beautifully for busy mornings.

  • 10 large eggs (room temperature)
  • 1 cup whole milk (or half-and-half)
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1 cup crumbled feta cheese (block-style in brine preferred)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup finely diced onion (yellow or sweet)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or spray oil.
  2. Thaw the frozen spinach (microwave 2-3 minutes if needed). Let cool, then wrap in a clean kitchen towel and squeeze out as much liquid as possible.
  3. Heat olive oil in a skillet over medium heat. Sauté diced onion for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together eggs, milk, salt, pepper, and red pepper flakes (if using) for about 1 minute until frothy.
  5. Add the squeezed-dry spinach and sautéed onion-garlic mixture to the egg mixture. Stir until evenly distributed.
  6. Fold in crumbled feta and shredded mozzarella until just combined.
  7. Pour the mixture into the greased baking dish. Spread evenly with a spatula. Tap the dish gently on the counter to release air bubbles.
  8. Bake for 35-40 minutes, until the center is set and edges are golden brown. A knife inserted in the center should come out clean.
  9. Let the casserole rest for 5-10 minutes before slicing.
  10. Garnish with fresh dill or parsley if desired. Slice into squares and serve warm or at room temperature.

Notes

Squeeze spinach dry to avoid a soggy casserole. Room temperature eggs emulsify better. Let the casserole rest before slicing for cleaner pieces. For make-ahead, assemble the night before and refrigerate; add 5-10 minutes to baking time.
