Easy Fresh Caprese Skewers Recipe with Balsamic Glaze to Impress

A quick and easy appetizer featuring cherry tomatoes, fresh mozzarella, and basil on skewers, drizzled with a homemade balsamic glaze for a fresh, flavorful bite.

  • 20 cherry tomatoes, ripe and firm
  • 20 fresh mozzarella balls (Bocconcini or Ciliegine)
  • 20 fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 12 tablespoons honey or brown sugar
  • 2 tablespoons extra virgin olive oil (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 20 wooden skewers (6-inch), soaked in water for 10 minutes if grilling

Instructions

  1. Prepare the balsamic glaze: Pour 1/2 cup balsamic vinegar into a small saucepan. Add 1-2 tablespoons honey or brown sugar depending on sweetness preference. Heat over medium-low, stirring occasionally. Simmer gently for 10-15 minutes until reduced by half and slightly thickened. Remove from heat and let cool.
  2. Rinse and dry the cherry tomatoes and basil leaves thoroughly to avoid diluting the glaze.
  3. Assemble the skewers by threading one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each wooden skewer. Repeat if skewers are longer, aiming for about 20 skewers total.
  4. Arrange skewers on a serving platter. Lightly drizzle with extra virgin olive oil if using. Sprinkle with salt and freshly ground black pepper to taste.
  5. Drizzle the cooled balsamic glaze evenly over the skewers just before serving to avoid sogginess.
  6. Serve fresh at room temperature. Refrigerate for up to a couple of hours before serving if needed.

Notes

Soak wooden skewers in water before grilling to prevent burning. Drizzle balsamic glaze just before serving to avoid soggy mozzarella and wilted basil. If glaze thickens too much, stir in a bit of water to loosen. Fresh, ripe ingredients make a big difference. Skewers can be refrigerated for up to 24 hours if glaze is kept separate and added last minute.
