  • 1 pound boneless, skinless chicken breasts or thighs, sliced into strips
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt, to taste
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • 2 cups cooked brown rice or quinoa (about 4/5 cup uncooked)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved (optional)
  • Fresh parsley or mint, chopped, for garnish

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. Add the sliced chicken and toss to coat evenly. Let it marinate for at least 15 minutes, or up to 2 hours in the fridge.
  2. Cook your choice of grain according to package instructions (brown rice about 45 minutes; quinoa about 15 minutes). Fluff with a fork and keep warm.
  3. Preheat oven to 400°F (200°C). Pat chickpeas dry with a towel to remove moisture. Toss chickpeas with olive oil, smoked paprika, cumin, and salt. Spread evenly on a parchment-lined baking sheet.
  4. Roast chickpeas for 25-30 minutes, shaking the pan every 10 minutes to ensure even crisping. Watch carefully during the last 5 minutes to avoid burning. Chickpeas should be golden and crunchy.
  5. Heat a skillet over medium-high heat. Add marinated chicken strips and cook for 4-5 minutes per side until browned and cooked through (internal temperature 165°F). Remove from heat and let rest.
  6. Grate cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir well and refrigerate until serving.
  7. Assemble bowls by dividing cooked rice or quinoa among containers. Top with chicken strips, crispy chickpeas, cherry tomatoes, red onion, olives (if using), and a dollop of tzatziki. Garnish with fresh parsley or mint.

Notes

Dry chickpeas thoroughly before roasting for best crunch. Do not overcrowd the pan when cooking chicken to ensure proper browning. Use fresh lemon juice for marinade and tzatziki for best flavor. Prepare tzatziki a day ahead for enhanced flavor. Store tzatziki separately and add fresh when serving to maintain texture. Reheat chicken and grains only; add tzatziki and chickpeas fresh to keep textures balanced.
