Easy Homemade Gingerbread Latte Recipe (Copycat)

A quick and easy homemade copycat Starbucks gingerbread latte made with simple pantry ingredients. This cozy, spicy-sweet latte comes together in under 5 minutes and tastes better than the drive-thru version.

  • 1 cup (240 ml) strong brewed coffee or 2 shots espresso
  • 1 cup (240 ml) milk of choice (whole, oat, 2%, or half-and-half)
  • 1 tablespoon (15 ml) unsulphured molasses
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons sweetener of choice (brown sugar, maple syrup, optional)
  • Whipped cream (optional, for topping)
  • Ground cinnamon or nutmeg (optional, for garnish)
  • Crushed gingerbread cookies (optional, for garnish)

Instructions

  1. Brew 1 cup (240 ml) of strong coffee or pull two shots of espresso. Set aside.
  2. In your serving mug or a small bowl, combine 1 tablespoon molasses, 1/2 teaspoon ground ginger, 1/4 teaspoon ground cinnamon, 1/8 teaspoon ground cloves, and 1/2 teaspoon vanilla extract. Add 1 tablespoon of very hot water. Whisk vigorously with a fork or small whisk until the molasses is fully dissolved and you have a smooth paste. If using extra sweetener, add it now and whisk to combine.
  3. Pour 1 cup (240 ml) of milk into a microwave-safe measuring cup or mug. Microwave on high for 60-90 seconds until steaming hot (about 150°F / 65°C). Do not boil. Froth the hot milk using a milk frother, French press, or by whisking vigorously until doubled in volume with creamy foam.
  4. Pour the hot, frothed milk into the mug over the gingerbread paste. Stir gently to combine until the paste dissolves completely.
  5. Slowly pour the brewed coffee or espresso into the mug. Give one final gentle stir.
  6. Top with whipped cream (if using), a sprinkle of cinnamon or nutmeg, and crushed gingerbread cookies (if using). Serve immediately.

Notes

The gingerbread paste method is key—do not skip dissolving the molasses and spices in hot water first to avoid a gritty latte. Cloves are potent; use only 1/8 teaspoon. For an iced version, skip frothing, add paste to a glass with ice, pour in cold milk, and top with cold brew or chilled espresso. Batch prep the paste and store in the fridge for up to a week for quick lattes.
