  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • ½ cup low-sodium chicken broth
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika (smoked paprika optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, garlic powder, onion powder, thyme, and paprika.
  2. Place the seasoned chicken in the bottom of your crockpot in a single layer, avoiding overlap.
  3. Pour the chicken broth around the edges (not directly on top of the chicken). Dot the butter on top of the chicken breasts.
  4. Cover and cook on LOW for 2.5 to 3 hours. Start checking internal temperature at 2.5 hours; aim for 165°F in the thickest part.
  5. Once chicken reaches 165°F, turn off the slow cooker. Remove chicken to a cutting board and let rest for 5 minutes.
  6. Using two forks, shred the chicken against the grain. Drizzle with a little cooking liquid if desired. Serve immediately or store.

Notes

Don’t overcook; check temperature at 2.5 hours. Use a meat thermometer for accuracy. Avoid lifting the lid during cooking. For extra flavor, sear chicken in a hot skillet before adding to crockpot. Shred while warm for best texture.
