Easy Kid-Approved White Chicken Chili in a Slow Cooker

A budget-friendly, creamy white chicken chili made in the slow cooker with tender chicken, white beans, and a velvety broth. Perfect for busy weeknights and loved by kids and adults alike.

  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 2 cans (15 oz / 425g each) Great Northern beans, drained and rinsed
  • 1 cup (150g) frozen corn
  • 4 cups (960ml) low-sodium chicken broth
  • 1 can (4 oz / 113g) green chiles, undrained
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 4 oz (113g) cream cheese, softened and cubed
  • Juice of 1 lime
  • Optional toppings: shredded Monterey Jack cheese, sour cream, fresh cilantro, tortilla chips, sliced avocado

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, and cube the cream cheese.
  2. Place the chicken thighs in an even layer at the bottom of a 5-6 quart slow cooker.
  3. Top the chicken with the diced onion, minced garlic, drained beans, and frozen corn.
  4. Sprinkle the ground cumin, dried oregano, chili powder, salt, and black pepper evenly over the ingredients.
  5. Pour the undrained green chiles and chicken broth over everything. Stir gently to combine the spices into the liquid.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fork-tender.
  7. Remove the chicken thighs from the slow cooker and shred with two forks. Return the shredded chicken to the pot.
  8. Add the cubed cream cheese and stir until completely melted and the broth is creamy.
  9. Squeeze the lime juice into the chili and stir. Taste and adjust salt and pepper if needed.
  10. Serve hot with desired toppings.

Notes

Use chicken thighs for best results; they stay moist and are budget-friendly. Add cream cheese at the end to prevent graininess. Lime juice is essential for brightening flavors. For a thicker chili, mash half a cup of beans before adding or leave the lid off for the last 30 minutes. This chili freezes well for up to 3 months.
