Easy Lighter Jack-o-Lantern Stuffed Bell Peppers

Fun, festive, and healthy stuffed bell peppers carved like jack-o-lanterns, filled with lean turkey, quinoa, and taco-seasoned goodness. Perfect for a weeknight Halloween dinner that’s quick, easy, and a crowd-pleaser.

  • 4 large orange bell peppers (squat and wide for stability)
  • 1 tablespoon olive oil (for brushing peppers)
  • 1 lb lean ground turkey (93/7)
  • 1 cup cooked quinoa (from 1/3 cup dry)
  • 1/2 cup finely diced yellow onion (about 1 small onion)
  • 2 cloves garlic, minced
  • 1 can (15 oz) fire-roasted diced tomatoes, drained
  • 1 can (4 oz) diced green chiles (mild)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/2 cup shredded reduced-fat Mexican blend cheese (or sharp cheddar)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • 1 can (15 oz) tomato sauce (for optional sauce)
  • 1/2 teaspoon chili powder (for optional sauce)
  • 1/4 teaspoon cumin (for optional sauce)
  • A pinch of salt (for optional sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Cook quinoa if not already prepared: rinse 1/3 cup dry quinoa, cook in 2/3 cup water or broth for about 15 minutes until fluffy.
  2. Wash and dry bell peppers. Cut off tops about 1/2 inch from stem. Remove seeds and membranes with a small spoon. Carve simple jack-o-lantern faces (triangles for eyes and mouth) into the sides using a sharp knife, cutting through skin and a thin layer of pepper wall.
  3. Optional but recommended: Blanch peppers in boiling water for 2-3 minutes to soften. Drain upside down on paper towels.
  4. Heat a large skillet over medium heat. Cook ground turkey, breaking it up, until browned and no longer pink (5-7 minutes). Drain excess liquid. Add diced onion and cook 3 minutes until softened. Stir in minced garlic and cook 30 seconds until fragrant.
  5. Transfer turkey mixture to a large bowl. Add cooked quinoa, drained fire-roasted tomatoes, diced green chiles, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well. Adjust seasoning to taste.
  6. If making sauce: whisk together tomato sauce, 1/2 teaspoon chili powder, 1/4 teaspoon cumin, and a pinch of salt. Spread a thin layer on the bottom of a 9×13-inch baking dish.
  7. Stand hollowed peppers upright in the dish. Spoon filling into each pepper, packing gently. Top each with shredded cheese.
  8. Cover dish loosely with aluminum foil. Bake for 25 minutes. Remove foil and bake another 10-15 minutes until cheese is bubbly and golden, and peppers are tender when pierced with a fork (total 35-40 minutes).
  9. Let rest 5 minutes. Transfer to plates, spoon extra sauce from pan over top, and garnish with fresh cilantro.

Notes

For best results, choose squat, wide orange bell peppers so they stand upright. Blanching peppers ensures tenderness. If peppers wobble, trim a thin slice off the bottom or use crumpled foil to keep them upright. Drain diced tomatoes well to avoid watery filling. Use a meat thermometer to ensure filling reaches 165°F (74°C). Leftovers keep in the fridge for up to 4 days and taste even better the next day.
