  • 1/2 cup shredded cheddar cheese (I prefer sharp cheddar for more flavor, but mozzarella or pepper jack are great too)
  • 1/2 cup bell pepper, finely diced (any color works; red adds a touch of sweetness)
  • 1/4 cup onion, finely diced (yellow or white onion is best)
  • 1/4 cup fresh spinach, roughly chopped (frozen spinach works but make sure to squeeze it dry first)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional, but I never skip it)
  • Non-stick cooking spray or a little butter for greasing the muffin tin
