  • 8 ounces deli turkey slices (honey roasted, oven roasted, or smoked)
  • 8 ounces sharp cheddar cheese, shredded
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional garnishes: fresh cilantro, chopped green onions, sour cream

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a small bowl, combine the melted butter, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
  3. Lay out the tortillas on a clean work surface.
  4. Divide the shredded cheddar cheese evenly among the tortillas, spreading it out and leaving a small border (about 1/2 inch) around the edges.
  5. Place the turkey slices on top of the cheese, using about 2-3 slices per quesadilla. Tear to fit if needed.
  6. Fold each tortilla in half over the filling and press down gently to seal.
  7. Using a pizza cutter or sharp knife, cut each folded quesadilla into 3 triangles (like dividing a pie into thirds).
  8. Arrange the triangles on the prepared baking sheet in a single layer, about 1/2 inch apart.
  9. Brush the tops of each triangle with the seasoned butter mixture, using all of it.
  10. Bake for 10-12 minutes, or until the tortillas are golden brown and crispy and the cheese is bubbly.
  11. Remove from the oven and let cool on the baking sheet for 2-3 minutes.
  12. Transfer to a serving platter, garnish with fresh cilantro or green onions if desired, and serve warm with your favorite dipping sauce.

Freeze baked and cooled bites in a single layer, then transfer to a freezer-safe bag for up to 3 months; reheat from frozen at 375°F (190°C) for 10-12 minutes.
