  • 1 pint vanilla ice cream, softened slightly

Instructions

  1. In a medium bowl, combine almond butter, honey, cocoa powder, vanilla extract, and salt. Stir until smooth and fully blended.
  2. Fold in oats until evenly mixed; mixture should be thick but pliable.
  3. Line an 8×8 inch pan with parchment paper, leaving an overhang for easy lifting.
  4. Press the brownie batter firmly and evenly into the pan about 1/2 inch thick.
  5. Cover the pan with plastic wrap and chill in the freezer for about 1 hour or in the fridge overnight until firm but not rock-hard.
  6. While the brownie base chills, let vanilla ice cream sit at room temperature for 5-10 minutes to soften slightly.
  7. Remove the brownie slab from the pan using the parchment overhang and slice into 8 equal squares.
  8. Spread a generous scoop of softened ice cream onto the bottom side of one brownie square, then gently press another brownie square on top to form a sandwich. Repeat for all squares.
  9. Optional: Roll the edges of the ice cream sandwiches in red, white, and blue sprinkles. You can also press fresh blueberries or strawberry slices on the ice cream edges before rolling in sprinkles.
  10. Place assembled sandwiches on a tray lined with parchment paper and freeze for at least 30 minutes to firm up.
