  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper, leaving an inch of paper hanging over the sides.
  2. Melt ½ cup (113g) unsalted butter in a microwave-safe bowl in 20-second intervals. Let it cool for a minute.
  3. In a large mixing bowl, whisk together the melted butter and ¾ cup (150g) granulated sugar until well combined (like wet sand). Add 2 room-temperature eggs and 1 teaspoon vanilla extract, and whisk until smooth and glossy.
  4. In a separate small bowl, mash 3 ripe bananas with a fork until mostly smooth with a few small lumps. Fold the mashed bananas into the wet mixture until just combined.
  5. Sprinkle 1½ cups (180g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt over the wet mixture. Fold gently with a rubber spatula or wooden spoon until no streaks of flour remain. Do not overmix.
  6. If using optional mix-ins (½ cup chocolate chips, nuts, etc.), fold them in with a few strokes.
  7. Pour the batter into the prepared pan and smooth the top gently.
  8. Bake for 50-60 minutes. After 50 minutes, insert a toothpick into the center—if it comes out clean or with a few moist crumbs, it’s done. If still wet, bake for another 5 minutes and check again.
  9. Cool in the pan on a cooling rack for 10 minutes.
  10. Remove from the pan using the parchment paper handles (or invert onto the rack) and cool completely before slicing.

Don’t overmix the batter—stir just until flour disappears. Check baking soda freshness by dropping a teaspoon into vinegar; it should fizz vigorously. Use an oven thermometer to ensure accurate temperature. Let melted butter cool slightly before adding eggs to avoid scrambling. For a crackly top, sprinkle a mixture of 1 tablespoon brown sugar and a pinch of cinnamon on the batter before baking. The bread tastes even better on day two.
