  • 1 large egg, room temperature
  • ¼ cup (60 ml) plain yogurt (Greek yogurt works well)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin or line with paper liners.
  2. Mash the bananas in a large mixing bowl until smooth with a few small lumps remaining.
  3. Add the melted butter to the mashed bananas and stir until combined.
  4. Mix in sugar, egg, and yogurt until the batter is uniform.
  5. In a small bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet banana mixture until just incorporated; do not overmix.
  7. Pour the batter evenly into the prepared muffin tin cups, filling each about ¾ full.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
