  • 3 medium ripe bananas, mashed
  • 1/2 cup (120g) pumpkin puree
  • 1/2 cup (100g) brown sugar
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp pumpkin spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1 tsp vanilla extract
  • 3/4 cup (130g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, and optionally line it with parchment paper.
  2. Mash the bananas in a mixing bowl until smooth but still a bit chunky, about 1 cup (250ml) of mashed fruit.
  3. Add the pumpkin puree, brown sugar, and vegetable oil to the mashed bananas and stir well until combined.
  4. Beat in the eggs and vanilla extract one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin spice.
  6. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until no flour streaks remain. Do not overmix.
  7. Fold in the chocolate chips, reserving a small handful to sprinkle on top if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle reserved chocolate chips evenly on top.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Check at 50 minutes to avoid overbaking.
  10. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Use ripe bananas for best flavor. Do not overmix the batter to keep the bread tender. Measure flour by weight for consistent results. Room temperature eggs and wet ingredients help create a lighter texture. Add chocolate chips last to keep pockets of melted chocolate. Bake on center rack and tent with foil if browning too quickly. Cool before slicing to set crumb.
