Instructions

  1. Preheat your oven to 350°F (175°C) if baking immediately.
  2. Grease a 9×13 inch (23×33 cm) casserole dish with 2 tablespoons melted butter, coating edges well.
  3. Cut each cinnamon roll into quarters to help soak up custard and bake evenly.
  4. Spread the cinnamon roll pieces evenly in the greased baking dish, allowing slight overlap.
  5. In a mixing bowl, whisk together 6 large eggs, 2 cups whole milk, 1/4 cup brown sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and a pinch of salt until smooth and slightly frothy.
  6. Pour the custard mixture slowly over the cinnamon roll pieces, pressing gently with a spatula or spoon to help soak.
  7. Optionally sprinkle additional ground cinnamon or chopped nuts on top.
  8. Cover the dish with plastic wrap or foil and refrigerate overnight or at least 6 hours.
  9. Remove cover and bake in the preheated oven for 45 to 50 minutes until the top is golden brown and slightly crisp and the center is set but moist. Tent with foil if browning too fast.
