  • 2 medium ripe bananas, mashed
  • 1/2 cup natural creamy peanut butter
  • 1 cup old-fashioned rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 tablespoon ground flaxseed (optional)
  • 2 tablespoons honey or maple syrup
  • 1/4 cup milk (dairy or plant-based)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your mini muffin tin or line it with mini cupcake liners.
  3. Mash the bananas in a large bowl using a fork or potato masher until smooth but slightly chunky.
  4. Add the peanut butter, egg, honey or maple syrup, milk, and vanilla extract to the mashed bananas. Mix until combined and silky smooth.
  5. In a separate bowl, whisk together the oats, whole wheat flour, baking powder, cinnamon, ground flaxseed (if using), and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix; a few lumps are okay.
  7. Spoon the batter into the mini muffin cups, filling each about 3/4 full. This recipe makes approximately 24 mini muffins.
  8. Bake for 12-15 minutes, checking at 12 minutes with a toothpick. If it comes out clean or with a few moist crumbs, the muffins are done.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for sweetness and moisture. Do not overmix the batter to keep muffins tender. Room temperature eggs and milk blend better. Baking powder must be fresh for proper rise. Muffins can be stored in an airtight container at room temperature for 2 days, refrigerated for up to 5 days, or frozen for up to 3 months. Warm peanut butter slightly if too thick for easier mixing.
