A quick and easy roasted vegetable tray served with a creamy, garlicky ranch dip made with roasted garlic and a packet of ranch seasoning. Perfect for weeknights, parties, or Halloween movie nights.

  • 1 large head of garlic
  • 1 tablespoon olive oil (for the garlic)
  • 4 cups mixed vegetables, chopped into bite-sized pieces (broccoli, cauliflower, carrots, bell peppers)
  • 2 tablespoons olive oil (for the veggies)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons milk (to thin the dip)
  • A few drops of green or orange food coloring (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Cut about ½ inch off the top of the garlic head to expose the cloves. Place on a small piece of foil, drizzle with 1 tablespoon olive oil, and sprinkle with a pinch of salt. Wrap tightly to create a sealed packet. Place on the baking sheet.
  3. Wash and chop vegetables into bite-sized pieces (about 1 to 1½ inches). In a large bowl, toss with 2 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon black pepper, and smoked paprika if using.
  4. Spread vegetables in a single layer around the garlic packet on the baking sheet. Do not overcrowd.
  5. Roast for 30-35 minutes, stirring halfway through. Vegetables are done when tender with golden-brown edges; garlic is ready when cloves are soft.
  6. While veggies roast, make the dip: In a small bowl, combine sour cream, mayonnaise, ranch seasoning, and lemon juice. Stir until smooth. Add milk one tablespoon at a time until desired consistency. Add food coloring if using. Cover and refrigerate.
  7. Once garlic is cool enough to handle (about 5 minutes), squeeze roasted cloves out of skins into a small bowl. Mash with a fork until smooth.
  8. Add mashed roasted garlic to the ranch dip and stir until fully incorporated. Taste and adjust seasoning.
  9. Arrange roasted vegetables on a serving platter. Place the dip bowl in the center. Serve warm or at room temperature.

Notes

Roast garlic up to 3 days in advance. Vegetables are best fresh but can be chopped a day ahead. For extra char, broil for the last 2-3 minutes. Dip flavors improve with resting time.
