  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil (optional, for searing)
  • 1/2 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Trim any silver skin or excess fat from the pork tenderloin. Pat dry with paper towels.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until golden brown, about 10 minutes.
  3. In a bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and Dijon mustard until smooth.
  4. Place the pork tenderloin in the slow cooker. Pour the honey garlic sauce over the pork, coating it well.
  5. Cover and cook on LOW for 3 to 4 hours, or until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  6. Transfer the pork to a cutting board and let rest for 5-10 minutes to lock in juices.
  7. Optional: Pour the cooking liquid into a saucepan and simmer over medium heat for about 5 minutes until slightly thickened to create a glaze.
  8. Slice the pork into medallions, drizzle with the reduced sauce, and garnish with fresh parsley if desired.

Searing the pork before slow cooking is optional but adds extra flavor and color. Use a meat thermometer to ensure the pork reaches 145°F (63°C) for safe and juicy results. Resist opening the slow cooker lid during cooking to maintain consistent heat. Adjust sweetness or acidity by adding more honey or vinegar to taste. For a thicker sauce, simmer the cooking liquid after removing the pork. Leftovers keep well refrigerated for up to 3 days and freeze for up to 2 months.
