These easy slow cooker salsa verde chicken tacos are made with just three ingredients and minimal prep. The chicken comes out impossibly tender, the salsa verde adds a bright, tangy kick, and the whole thing comes together with almost no effort.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 16 ounces salsa verde (one standard jar)
  • 1 packet (about 1 ounce) taco seasoning
  • For serving: corn or flour tortillas, and your favorite toppings (shredded lettuce, diced tomatoes, sour cream, shredded cheese, fresh cilantro, lime wedges)

Instructions

  1. Place the chicken in the slow cooker in a single layer.
  2. Pour the entire jar of salsa verde over the chicken and sprinkle the taco seasoning evenly on top. Gently stir to combine.
  3. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fork-tender.
  4. Transfer the cooked chicken to a cutting board or bowl and shred with two forks.
  5. Return the shredded chicken to the slow cooker and stir into the salsa verde mixture. Let sit on warm or low for 10 to 15 minutes.
  6. Warm your tortillas (over a gas burner or in the microwave).
  7. Assemble tacos by spooning the chicken into tortillas and adding desired toppings.

Notes

If chicken is still tough after 6 hours on low, cook another hour. Don’t skip returning shredded chicken to the salsa verde for extra juiciness. For a milder version, use mild salsa verde and skip the taco seasoning packet. Leftovers keep in the refrigerator for up to 4 days and freeze for up to 3 months.
