Instructions

  1. Make the Lavender Simple Syrup: In a medium saucepan, combine 1 cup water, 3/4 cup granulated sugar, and 2 tablespoons dried lavender buds.   2. Cool and Strain: Remove from heat and let the syrup steep for 10 minutes to deepen the lavender flavor. Strain through a fine mesh strainer into a bowl or pitcher, pressing gently on the lavender buds to extract syrup. Discard solids.
  3. Juice the Lemons: While syrup cools, juice 4-5 lemons to yield about 1 cup fresh lemon juice. Strain to remove seeds and pulp if desired.
  4. Combine Lemon Juice and Syrup: In a large pitcher, mix lemon juice, lavender simple syrup, and remaining 3 cups cold water. Stir well. Adjust sweetness or tartness by adding more water or lemon juice if needed.
  5. Chill: Refrigerate lemonade for at least 1 hour before serving to let flavors meld.
  6. Serve: Fill glasses with ice cubes and pour chilled lavender lemonade over. Garnish with fresh lavender sprigs or lemon wheel if desired. Enjoy immediately.

Notes

Do not boil the lavender syrup vigorously to avoid bitterness. Steep lavender for 5-10 minutes only to prevent a soapy taste. Adjust sweetness and tartness to your preference.
