These Easy Turkey Pinwheel Lunchbox Roll-Ups are a quick, no-cook lunch idea that kids and adults love. Made with simple ingredients like turkey, cream cheese, spinach, and tortillas, they come together in under 10 minutes and hold up beautifully in lunchboxes.

Ingredients

Scale
  • 4 large flour tortillas (10-inch size)
  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 pound thinly sliced turkey breast (deli-style)
  • 1 cup fresh spinach leaves, washed and dried
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup sun-dried tomatoes, chopped (optional)

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 30 minutes before you start. You want it soft enough that you can press into it easily with your finger. If you’re in a hurry, microwave it for 10-15 seconds on low power—just watch it carefully so it doesn’t melt.
  2. Make the spread: In your small mixing bowl, combine the softened cream cheese, mayonnaise, garlic powder, onion powder, and black pepper. Stir until everything is smooth and well combined. Taste it and adjust the seasonings if you want.
  3. Prepare your work surface: Lay one tortilla flat on your cutting board. Spread about 2-3 tablespoons of the cream cheese mixture evenly over the entire surface, going all the way to the edges.
  4. Layer the turkey: Place 3-4 slices of turkey over the cream cheese, overlapping them slightly so there are no gaps. You want a single layer that covers the tortilla from edge to edge.
  5. Add the spinach: Lay a single layer of spinach leaves over the turkey. Don’t pile them up too thick—one layer is perfect.
  6. Add optional toppings: If you’re using shredded cheese or sun-dried tomatoes, sprinkle them evenly over the spinach now.
  7. Roll it up tight: Starting from one edge, roll the tortilla tightly toward the other edge. Use your fingers to keep the filling tucked in as you go. When you reach the end, press gently to seal the edge.
  8. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper to keep it snug. Repeat with the remaining tortillas. Place all the wrapped rolls on a baking sheet or plate and refrigerate for at least 30 minutes.
  9. Slice the pinwheels: After chilling, unwrap one roll at a time and place it on your cutting board. Using a sharp serrated knife, slice the roll into 1-inch thick rounds. Use a gentle sawing motion rather than pressing straight down. You should get about 6-8 pinwheels per tortilla.
  10. Pack and serve: Arrange the pinwheels in a lunch container or serving platter. They’re ready to eat immediately or pack for later.

Notes

Let cream cheese soften to room temperature for smooth spreading. Dry spinach thoroughly to prevent sogginess. Chilling for at least 30 minutes is essential for clean slicing. Use a sharp serrated knife with a gentle sawing motion for best results. These can be made the night before and taste even better the next day.
