Instructions

  1. Soften the butter by leaving 1 cup (227g) of unsalted butter out of the fridge for about 30 minutes until soft but not melting.
  2. Prepare flavorings: mince herbs finely, zest one lemon, and finely chop roasted garlic cloves.
  3. Whip the softened butter using a hand or stand mixer on medium speed for 2-3 minutes until light and fluffy.
  4. Lower mixer speed and add herbs, garlic, lemon zest, salt, and pepper. For honey-cinnamon butter, add 1 tablespoon honey and 1/2 teaspoon cinnamon instead. Mix until evenly distributed without overmixing.
  5. Taste and adjust seasoning as needed.
  6. Spoon the mixture onto plastic wrap or parchment paper and roll into a log about 1.5 inches (4 cm) in diameter. Twist ends to seal.
  7. Refrigerate the butter log for at least 1 hour to firm up, or freeze for 20 minutes if in a hurry.
