Flavorful Dill Pickle Pasta Salad Recipe with Tangy Dressing

A quick and easy pasta salad featuring elbow macaroni, sharp cheddar cubes, crunchy dill pickles, and a tangy dressing made with dill pickle juice, mustard, and honey. Perfect for summer gatherings and potlucks.

  • 8 ounces elbow macaroni or small shell pasta
  • 1 cup sharp cheddar cheese, cut into small cubes
  • 1 cup dill pickles, diced
  • ½ cup red onion, finely chopped
  • ½ cup celery, diced
  • ½ cup mayonnaise
  • ¼ cup dill pickle juice
  • 1 tablespoon yellow mustard
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of elbow macaroni and cook according to package instructions, usually 8-10 minutes, until al dente. Drain well and rinse under cold water to stop the cooking process and cool the pasta. Set aside to drain completely.
  2. While pasta cooks, dice 1 cup of dill pickles, ½ cup red onion, and ½ cup celery. Cut 1 cup of sharp cheddar into small cubes. Keep the cheese refrigerated until ready to toss.
  3. In a medium bowl, whisk together ½ cup mayonnaise, ¼ cup dill pickle juice, 1 tablespoon yellow mustard, and 1 teaspoon honey until smooth. Add 1 tablespoon fresh dill, salt, and pepper to taste. Adjust seasoning if necessary.
  4. Add the cooled pasta, diced pickles, chopped onion, celery, and cheddar cubes to the bowl with the dressing. Use a spatula to gently fold everything together until evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving. Give it a final stir before plating.

Notes

Rinse pasta under cold water after cooking to prevent sticking and cool it for the salad. Fold gently to keep cheddar cubes intact. The salad tastes better after chilling for a few hours or overnight. For dairy-free, substitute cheddar with vegan cheese and use dairy-free mayo. Adjust dressing sweetness carefully to balance acidity.
