  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice, freshly squeezed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil, for coating the wings
  • Optional: fresh cilantro or parsley for garnish

Instructions

  1. Rinse the chicken wings under cold water and pat dry with paper towels. Place wings in a medium bowl.
  2. Drizzle 2 tablespoons of olive oil over the wings. Sprinkle with salt, black pepper, and smoked paprika. Toss well to coat evenly. Let them sit while you prepare the glaze.
  3. In a small saucepan over medium heat, combine diced mango, minced jalapeños, honey, garlic, apple cider vinegar, and lime juice. Stir and bring to a gentle simmer. Cook for about 10 minutes, stirring frequently, until the mango softens and the mixture thickens slightly.
  4. Remove from heat and puree the mixture until smooth using an immersion blender or regular blender. Let cool slightly before blending to avoid splatters.
  5. Preheat the grill to medium-high heat (about 400°F / 200°C). If using charcoal, ensure the coals are ashed over and spread evenly.
  6. Arrange wings on the grill in a single layer. Cook for 7-10 minutes per side, turning occasionally, until wings reach an internal temperature of 165°F (74°C) and have a nice char.
  7. During the last 5 minutes of grilling, baste the wings generously with the mango jalapeño glaze every 2-3 minutes to build up sticky layers of flavor.
  8. Remove wings from the grill and let rest for 5 minutes to allow juices to redistribute.
  9. Garnish with chopped cilantro or parsley if desired and serve with extra glaze on the side.
