  • 6 to 8 small soft flour tortillas
  • Pickled red onions (store-bought or homemade)
  • Secret Sauce:
  • 1/2 cup mayonnaise (120 ml)
  • 2 tablespoons ketchup (30 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • 1 teaspoon Worcestershire sauce (5 ml)
  • 1/2 teaspoon smoked paprika (1.5 g)
  • 1/4 teaspoon garlic powder (0.5 g)
  • 1 teaspoon fresh lemon juice (5 ml)
  • Cheese slices (optional, sharp cheddar or American cheese)
  • Butter or oil for cooking and warming tortillas
  • For homemade pickled onions:
  • 1 medium red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Instructions

  1. Prepare the secret sauce by whisking together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, and lemon juice in a mixing bowl. Refrigerate until ready to use.
  2. If making fresh pickled onions, thinly slice one medium red onion and soak in a mixture of apple cider vinegar, sugar, and salt for at least 30 minutes. Refrigerate.
  3. Divide ground beef into 6 equal portions and loosely roll each into a ball without overworking the meat.
  4. Heat a cast iron skillet or heavy-duty frying pan over medium-high heat and add butter or oil. Heat until hot but not smoking.
  5. Place one beef ball in the skillet and press down firmly with a metal spatula to form a thin patty about 1/4 inch thick. Cook without moving for 2-3 minutes until edges are brown and crispy.
  6. Flip the patty carefully and cook the other side for 2 minutes. Add a slice of cheese if desired to melt.
  7. Repeat cooking patties in batches to avoid overcrowding the skillet.
  8. Warm tortillas in a dry pan or microwave wrapped in a damp towel until pliable.
  9. Assemble tacos by spreading secret sauce on each tortilla, layering smashed burger patties, and topping with pickled onions. Add extra sauce or cheese as desired. Fold and serve immediately.

Notes

Use cold beef balls and press firmly and quickly to get a thin, crispy crust. Avoid flipping patties multiple times. Keep the skillet hot and work in batches. Corn tortillas can be used for gluten-free option. Secret sauce can be made ahead and refrigerated up to one week. Leftover patties reheat well in a skillet.
