  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 ¼ cups (300ml) buttermilk
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted (plus extra for cooking)
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen blueberries

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula or wooden spoon. Do not overmix; a few lumps are okay.
  4. Gently fold in the blueberries, adding frozen blueberries straight from the freezer if using.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour ¼ cup (60ml) of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  7. Flip carefully and cook for another 1-2 minutes until golden and cooked through.
  8. Transfer cooked pancakes to a wire rack in a warm oven (~200°F/95°C) or cover loosely with foil to keep warm.
  9. Serve immediately with your favorite toppings such as maple syrup, extra berries, or whipped cream.

Notes

Do not overmix the batter to keep pancakes tender and fluffy. Use room temperature eggs for better texture. Fold blueberries gently to avoid bursting. Let batter rest for 5 minutes before cooking. Preheat pan properly and cook on medium heat. Flip pancakes only once when bubbles form and edges are set.
