These fluffy pumpkin protein muffins with almond flour are tender, perfectly spiced, and come together in under 30 minutes. Made with simple ingredients, they’re a healthy, protein-packed breakfast or snack that tastes like comfort food.

Ingredients

Scale
  • 2 cups (200g) almond flour
  • 1 cup (245g) pumpkin puree (100% pure, not pie filling)
  • 3 large eggs, at room temperature
  • 1/2 cup (60g) unflavored or vanilla protein powder
  • 1/3 cup (65g) coconut sugar
  • 1/4 cup (60ml) coconut oil, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chocolate chips or chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
  2. In a large bowl, whisk together almond flour, protein powder, coconut sugar, pumpkin pie spice, baking soda, baking powder, and salt until no clumps remain.
  3. In a separate medium bowl, whisk together pumpkin puree, eggs, melted coconut oil, and vanilla extract until smooth and fully combined.
  4. Pour wet ingredients into dry ingredients. Fold gently with a spatula until just combined (about 15-20 strokes). Do not overmix.
  5. If using, fold in chocolate chips or nuts evenly.
  6. Divide batter evenly among 12 muffin cups, filling each about 3/4 full. Batter will be thick.
  7. Bake on middle rack for 18-22 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Tops should be golden and spring back when touched.
  8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Let batter rest for 5 minutes after mixing for more tender muffins. Do not open oven door during first 15 minutes of baking. Muffins taste even better on day two. Store in airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
