Fresh 4-Ingredient No-Cook Strawberry Kiwi Fruit Salsa

A quick, fresh, and easy no-cook fruit salsa made with strawberries, kiwi, lime juice, and mint. Perfect for summer picnics, BBQs, or as a refreshing snack.

  • 1 cup fresh strawberries, hulled and diced
  • 2 medium ripe kiwis, peeled and diced
  • Juice of 1 fresh lime
  • 68 fresh mint leaves, finely chopped

Instructions

  1. Rinse about 1 cup of fresh strawberries under cold water. Hull and dice into roughly 1/4-inch cubes.
  2. Peel and dice 2 medium kiwis into pieces similar in size to the strawberries.
  3. Finely chop 6-8 fresh mint leaves.
  4. In a mixing bowl, gently toss the diced strawberries, kiwi, and chopped mint together without mashing the fruit.
  5. Squeeze fresh juice from 1 lime over the fruit mixture and stir lightly to combine.
  6. Let the salsa rest for about 5 minutes before serving to allow flavors to mingle.

Notes

Use ripe fruit for best flavor and texture. Gently toss to avoid bruising the fruit. Prepare no more than 2 hours ahead and keep refrigerated. Optional additions include a pinch of jalapeño for heat or a drizzle of honey if fruit is not sweet enough.
