A quick and easy 10-minute snack featuring creamy Greek yogurt, fresh grated cucumber, and bright dill for a refreshing and healthy dip.

Ingredients

Scale
  • 1 cup (240 ml) Greek yogurt, full-fat or 2%
  • 1 medium cucumber, peeled and grated (squeeze out excess moisture)
  • 2 tablespoons fresh dill, finely chopped
  • 1 small garlic clove, minced (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon olive oil
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Peel the cucumber, then grate it using the box grater’s fine side. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much water as possible. (Time: 5 minutes)
  2. Finely chop fresh dill leaves, avoiding thick stems. (Time: 2 minutes)
  3. In a medium bowl, combine Greek yogurt, lemon juice, olive oil, salt, and pepper. Stir until smooth and creamy. (Time: 1 minute)
  4. Mince or grate the garlic finely and stir it into the yogurt mixture (optional).
  5. Fold in the grated cucumber and chopped dill gently but thoroughly. Taste and adjust seasoning if needed. (Time: 1-2 minutes)
  6. Chill the dip in the refrigerator for at least 10 minutes before serving to let flavors meld (optional).

Notes

Drain the cucumber well to avoid watery dip. Use thick Greek yogurt for best creaminess. Fresh dill is essential for bright flavor. Garlic is optional and can be adjusted to taste. Chilling the dip enhances flavor but can be served immediately. For a smoother texture, blend briefly in a food processor. Variations include swapping dill for mint or parsley, adding cayenne for spice, or using dairy-free yogurt for vegan version.
