Fresh Grilled Corn with Zesty Cilantro Lime Butter

A quick and easy summer side dish featuring grilled corn slathered with a zesty butter infused with fresh cilantro and lime juice, delivering a perfect balance of smoky sweetness and fresh tang.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika or chili powder

Instructions

  1. Preheat your grill to medium-high heat (about 400°F). If using charcoal, wait until coals are covered with white ash (15-20 minutes).
  2. In a small bowl, combine softened butter, chopped cilantro, lime juice, minced garlic, salt, and black pepper. Mix well. Add smoked paprika or chili powder if desired.
  3. Remove husks and silk from corn. Rinse and pat dry. Alternatively, peel back husks without removing, remove silk, then fold husks back for smokier flavor.
  4. Place corn directly on grill grates. Turn every 2-3 minutes to ensure even charring. Grill for 10-12 minutes until golden-brown with some blackened spots.
  5. Spread the cilantro lime butter generously over hot grilled corn using a basting brush or spoon.
  6. Serve immediately while warm. Optionally garnish with extra chopped cilantro or a squeeze of lime.

Notes

If butter mixture is too thick, soften in microwave for 10 seconds before spreading. Turn corn patiently to avoid burning. For dairy-free option, substitute butter with plant-based spread. Fresh lime juice is preferred for best flavor. Can roast corn in oven at 425°F for 20-25 minutes if no grill is available.
