  • 3 medium ripe peaches, peeled and diced
  • 1 medium jalapeño, seeded and finely chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon salt, or to taste
  • 1 teaspoon honey or agave syrup (optional)
  • 1 tablespoon olive oil

Instructions

  1. Wash and peel about 3 medium ripe peaches by blanching them in boiling water for 30 seconds, then transferring to ice water. Peel skins off and dice into roughly 1/2-inch cubes.
  2. Slice the jalapeño in half, remove seeds if less heat is desired, and finely dice the flesh.
  3. Finely chop 1/4 cup of red onion.
  4. In a mixing bowl, combine diced peaches, jalapeño, red onion, and 2 tablespoons chopped cilantro.
  5. Add juice from 1 lime (about 2 tablespoons), 1/2 teaspoon salt, and 1 tablespoon olive oil. If peaches are tart, add 1 teaspoon honey or agave syrup. Stir gently to combine without mashing peaches.
  6. Cover and refrigerate for at least 15 minutes to let flavors meld and soften the jalapeño heat.
  7. Before serving, stir and taste. Adjust salt or lime juice as needed.

Notes

If salsa is too watery, drain some juice before serving. Keep peach chunks roughly 1/2-inch for best texture. Taste jalapeño before adding to adjust heat. Chilling salsa enhances flavor and mellows heat. Can substitute jalapeño with milder peppers or add smoky paprika for variation.
