Fresh Mini Caprese Skewer Lunchbox Recipe with Easy Apple Dip

A quick and easy lunchbox recipe featuring bite-sized mini caprese skewers paired with a simple, sweet apple dip. Perfect for a fresh, portable, and crowd-pleasing meal.

Ingredients

  • Cherry tomatoes, halved or whole if small
  • Fresh mozzarella balls (bocconcini or ciliegine size)
  • Fresh basil leaves, whole
  • Extra virgin olive oil
  • Balsamic glaze or reduction (optional)
  • Salt and freshly ground black pepper to taste
  • Greek yogurt (full-fat or 2%)
  • Honey or maple syrup
  • Grated apple, peeled (Fuji or Honeycrisp preferred)
  • Ground cinnamon (a pinch)
  • Fresh lemon juice

Instructions

  1. Rinse the cherry tomatoes and basil leaves gently under cold water. Pat dry with paper towels. Halve the tomatoes if large. Drain the mozzarella balls and set aside.
  2. Take one skewer and thread a cherry tomato, followed by a basil leaf folded in half if large, then a mozzarella ball. Repeat until all ingredients are used. Arrange the finished skewers on a plate or lunchbox container.
  3. In a mixing bowl, combine Greek yogurt, honey or maple syrup, grated apple, a pinch of cinnamon, and a squeeze of fresh lemon juice. Stir gently until well mixed. Adjust sweetness or cinnamon as desired.
  4. Drizzle the assembled skewers lightly with extra virgin olive oil and, if desired, balsamic glaze. Sprinkle with salt and freshly ground black pepper.
  5. Place the skewers and a small container of apple dip into your lunchbox or portable container. Keep refrigerated until ready to eat. Add balsamic glaze just before eating if prepping ahead.

Notes

Use the freshest tomatoes and basil for best flavor. Prepare the apple dip just before packing to keep it fresh and prevent browning. If basil leaves wilt, wrap them in a damp paper towel before storing. For dairy-free, swap mozzarella with vegan cheese or tofu and Greek yogurt with coconut yogurt. Add balsamic glaze just before serving to avoid sogginess.
