  • 1 cup fresh basil leaves, washed and patted dry

  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon honey (optional)
  • Salt and freshly ground black pepper to taste
  • About 12 wooden skewers, soaked in water for 20 minutes if grilling

Instructions

  1. Wash and dry the nectarines, then slice each into 8 wedges (about 1/2-inch thick). Set aside.
  2. Drain the mozzarella balls in a colander and pat lightly with a paper towel if needed to avoid sogginess.
  3. In a small bowl, combine 1 cup fresh basil leaves (loosely packed), 3 tablespoons extra virgin olive oil, 1 tablespoon lemon juice, and 1 teaspoon honey. Use a whisk or fork to blend until smooth and slightly emulsified.
  4. On each wooden skewer, thread one nectarine wedge, followed by a mozzarella ball, then a fresh basil leaf. Repeat until the skewer is full but not overcrowded (usually 3-4 pieces per skewer).
  5. Lightly sprinkle salt and freshly ground black pepper over each skewer to enhance the flavors.
  6. Arrange the skewers on a serving platter and drizzle with the prepared basil mixture right before serving.
  7. Optional: Chill the skewers for 10-15 minutes if you prefer a cooler snack to let the flavors marry beautifully.
