A simple, colorful twist on the classic Caprese salad featuring cherry tomatoes, fresh mozzarella, basil, and a tangy-sweet balsamic glaze. Perfect for summer celebrations and quick to assemble.

  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella balls (bocconcini), drained and sliced in half
  • 2025 small fresh basil leaves
  • 2 to 3 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper to taste
  • Toothpicks or mini skewers for assembling

Instructions

  1. Rinse the cherry tomatoes and slice each one in half. Place them in a mixing bowl.
  2. Drizzle 1 tablespoon of extra virgin olive oil over the tomatoes. Sprinkle a pinch of sea salt and freshly ground black pepper. Toss gently to coat evenly.
  3. Drain the bocconcini and cut each ball in half horizontally to match the size of your tomato halves.
  4. Take a toothpick or mini skewer and layer as follows: one half of a cherry tomato, one fresh basil leaf folded if large, then a mozzarella half, and finish with another tomato half, red side out.
  5. Place the assembled bites neatly on your serving tray with the toothpicks pointing up for easy grabbing.
  6. Drizzle 2-3 tablespoons of balsamic glaze over the bites just before serving.
  7. Optionally sprinkle a tiny pinch of sea salt and freshly cracked pepper over the top to finish.

Notes

If you want to prep early, assemble the bites but hold off on drizzling the balsamic glaze until just before serving to keep them fresh and prevent sogginess. Use ripe but firm cherry tomatoes and drain mozzarella thoroughly to avoid sogginess. If balsamic glaze is unavailable, reduce balsamic vinegar on the stove until syrupy. For a dairy-free version, substitute mozzarella with marinated tofu or vegan cheese. Optionally grill bites briefly for a warm version.
