  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup freshly squeezed lemon juice (about 45 lemons)
  • 3/4 cup granulated sugar (adjust to taste; can substitute honey or agave)
  • 4 cups cold water
  • Ice cubes, for serving
  • Fresh mint leaves (optional, a few sprigs)
  • Lemon slices, for garnish

Instructions

  1. Rinse and hull about 2 cups of fresh strawberries. Slice roughly and blend in a blender or food processor until smooth, about 30 seconds to 1 minute.
  2. Pour the blended strawberries through a fine mesh sieve into a bowl or pitcher, pressing with a spoon to remove seeds and pulp for a silky texture.
  3. Roll lemons on the counter, cut in half, and juice to yield about 1 cup of fresh lemon juice, avoiding too much pith.
  4. In the pitcher with strawberry juice, add lemon juice and 3/4 cup granulated sugar. Stir until sugar dissolves completely. Adjust sweetness if desired.
  5. Add 4 cups cold water and stir to combine. Taste and adjust sweetness or tartness as needed. Add ice cubes and fresh mint sprigs if using. Serve immediately.

Notes

Use ripe, fragrant strawberries for best flavor. Straining the puree is key for a silky texture. Adjust sweetness gradually to avoid syrupiness. Chill all ingredients and serve immediately for freshest taste. Leftover strawberry pulp can be added to yogurt or oatmeal. Best consumed within 24 hours. Frozen strawberries can be used after slight thawing. For a fizzy twist, replace still water with sparkling water before serving.
