A quick and easy light bite featuring juicy watermelon, tangy feta, and fresh mint on skewers, perfect for summer gatherings and snacks.

Ingredients

  • 1 medium watermelon, cut into 1-inch cubes (about 40 cubes)
  • 1 block of firm feta cheese, cut into 1-inch cubes
  • Fresh mint leaves, whole and washed
  • Extra virgin olive oil, for drizzling
  • Sea salt or flaky salt, a pinch
  • Freshly ground black pepper, optional
  • Wooden skewers, small or medium-sized, soaked in water for 10 minutes (optional)

Instructions

  1. Cut the watermelon into 1-inch cubes and pat dry with paper towels to remove excess moisture.
  2. Cut the feta block into 1-inch cubes. If feta is crumbly, chill in the fridge for 10 minutes before cutting.
  3. Wash and dry fresh mint leaves, selecting whole unblemished leaves about 1 to 2 inches long. Remove thick stems.
  4. Assemble the skewers by threading one watermelon cube, followed by a mint leaf (folded in half if large), then a feta cube. Repeat until all ingredients are used.
  5. Arrange the skewers on a serving platter. Lightly sprinkle flaky sea salt and freshly ground black pepper if desired.
  6. Drizzle extra virgin olive oil evenly over the skewers.
  7. Refrigerate the skewers for about 10 minutes before serving to allow flavors to meld and keep them cool (optional but recommended).

Notes

Pat watermelon cubes and mint leaves dry to avoid soggy skewers. Chill feta if crumbly before cutting. Soak wooden skewers if grilling. Assemble skewers just before serving if prepping ahead to keep fresh. Optional grilling for 2-3 minutes per side adds smoky flavor.
