Fresh Watermelon Feta Salad Recipe Easy with Mint and Balsamic Glaze

A refreshing summer salad combining juicy watermelon, tangy feta, fresh mint, and a luscious balsamic glaze for a perfect sweet and salty flavor balance.

  • 4 cups fresh watermelon, cubed into bite-sized pieces
  • 1 cup crumbled feta cheese
  • A handful of fresh mint leaves, roughly chopped
  • 3 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt
  • Optional: thinly sliced red onions
  • Optional: toasted pine nuts

Instructions

  1. Using a sharp chef’s knife, cut about 4 cups (600g) of watermelon into bite-sized cubes. Remove any seeds if needed.
  2. Rinse and pat dry a handful of fresh mint leaves. Chop them roughly.
  3. In a large mixing bowl, gently combine the watermelon cubes, crumbled feta, and chopped mint. Toss carefully to avoid bruising the watermelon.
  4. Drizzle 1 tablespoon of extra virgin olive oil over the mixture. Sprinkle a pinch of sea salt and freshly ground black pepper to taste. Toss lightly again to distribute flavors evenly.
  5. Just before serving, drizzle 3 tablespoons of balsamic glaze over the salad. If making homemade glaze, simmer balsamic vinegar over medium heat until thickened (about 10-15 minutes).
  6. Give the salad one last gentle toss to spread the glaze. Serve immediately for the freshest experience.

Notes

Do not over-toss the salad to avoid bruising the watermelon. Prepare just before serving and keep balsamic glaze separate if prepping ahead to prevent sogginess. Use ripe, seedless watermelon for best results. For vegan version, substitute feta with plant-based cheese or tofu and ensure balsamic glaze is vegan.
