Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×9 inch baking pan or line it with parchment paper with an overhang.
  2. Shred about 1 cup of zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels.
  3. In a microwave-safe bowl, combine melted butter and semi-sweet chocolate chips. Microwave in 20-second bursts, stirring until smooth. Let cool about 5 minutes.
  4. In a mixing bowl, whisk together sugar and eggs until combined. Stir in vanilla extract.
