  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup (90g) chocolate chips or chopped chocolate (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter in a medium heatproof mixing bowl over simmering water or in the microwave in 30-second bursts, stirring until smooth (3-5 minutes).
  3. Add granulated sugar and brown sugar to the melted butter. Stir well until combined and slightly glossy, about 1-2 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract and stir to combine.
  5. Sift together the flour, cocoa powder, salt, and baking powder into a separate small bowl.
  6. Fold the dry ingredients gently into the wet mixture using a spatula until no streaks of flour remain. Do not overmix.
  7. Fold in chocolate chips or chopped chocolate if using.
  8. Pour the batter into the prepared pan and smooth the top. Tap the pan lightly to remove air bubbles.
  9. Bake for 22-25 minutes until edges look set but the center jiggles slightly when shaken gently.
  10. Cool completely in the pan on a wire rack before slicing.

Notes

Do not overmix the batter after adding dry ingredients to avoid cakey brownies. Check baking time closely; the center should jiggle slightly when done. Let brownies cool completely before slicing for clean cuts. For dairy-free, substitute butter with coconut oil and eggs with flax eggs. For gluten-free, use a 1:1 gluten-free flour blend.
