These healthy baked buffalo cauliflower bites are a crispy, spicy, and totally addictive game day snack. Made with a simple batter and tangy buffalo sauce, they’re a crowd-pleasing alternative to traditional wings that comes together in under 40 minutes.

  • 1 large head of cauliflower (about 2 pounds or 900g), cut into bite-sized florets
  • ¾ cup all-purpose flour
  • ½ cup water
  • ¼ cup milk (any kind works; 2% preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • Ranch or blue cheese dressing for dipping (optional)
  • Chopped fresh parsley or green onions for garnish (optional)
  • Celery sticks (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Prepare the cauliflower: Remove the leaves and thick core from the cauliflower. Cut into bite-sized florets—about 1½ to 2 inches wide. Try to keep them similar in size so they cook evenly.
  3. Make the batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper. Add the water and milk, whisking until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Coat the cauliflower: Add the cauliflower florets to the batter. Use your hands or a spatula to gently toss until every floret is evenly coated. Let them sit for 2 minutes so the batter adheres better.
  5. Arrange on baking sheet: Using your fingers or tongs, lift each floret out of the batter, letting any excess drip back into the bowl. Place them on the prepared baking sheet in a single layer with a little space between each piece.
  6. Bake the first round: Bake for 15 minutes. Remove from the oven and carefully flip each floret using tongs. Return to the oven and bake for another 10 to 12 minutes, until golden brown and crispy on the edges.
  7. Make the buffalo sauce: While the cauliflower bakes, whisk together the hot sauce, melted butter, honey, and apple cider vinegar in a medium bowl. Taste and adjust.
  8. Toss with sauce: Once the cauliflower is done baking, transfer the florets to the bowl with the buffalo sauce. Gently toss with tongs until every piece is coated. Toss and serve immediately.
  9. Serve: Transfer to a serving platter. Garnish with chopped parsley or green onions if desired. Serve hot with ranch or blue cheese dressing and celery sticks on the side.

Notes

For extra crispy bites, bake for 15 minutes, flip, bake for 10 minutes, then brush with a little oil and bake for another 3 to 5 minutes before saucing. Toss with sauce right before serving to maintain crispiness. For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan version, use plant-based milk, vegan butter or coconut oil, and maple syrup instead of honey.
