  • 2 green onions, thinly sliced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Prepare the chicken by shredding or dicing into bite-sized pieces (about 2 cups).
  2. Toast the walnuts in a dry skillet over medium heat, stirring frequently until golden and fragrant, about 3-4 minutes. Set aside to cool.
  3. Chop the celery, green onions, and fresh dill.
  4. In a medium bowl, combine Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Stir until smooth.
  5. Add the chicken, celery, green onions, and dill to the dressing. Fold gently to coat evenly without breaking up the chicken.
  6. Sprinkle in the toasted walnuts and mix briefly to keep them crunchy.
  7. Cover and refrigerate for at least 30 minutes before serving to let flavors meld. Serve chilled.
