Ingredients

Scale
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/2 cup (120g) Greek yogurt, plain, full-fat or low-fat
  • 1/4 cup (60g) cottage cheese, small curd preferred
  • 1/2 cup (75g) fresh blueberries (frozen works in winter)
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon honey or maple syrup (adjust to taste, can omit)
  • 1/2 cup (120ml) milk of choice (dairy or plant-based like almond or oat)
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions

  1. Measure and combine dry ingredients: In a mixing bowl, stir together 1/2 cup rolled oats, 1 tablespoon chia seeds (if using), and a pinch of salt.
  2. Add the dairy and liquids: Scoop in 1/2 cup Greek yogurt and 1/4 cup cottage cheese. Pour 1/2 cup milk of choice and add 1 tablespoon honey or maple syrup. Stir gently but thoroughly to blend everything into a creamy mixture with no clumps.
  3. Mix in flavorings: Add 1 teaspoon fresh lemon zest and 1/2 teaspoon vanilla extract. Stir again to evenly distribute.
  4. Fold in blueberries: Gently stir 1/2 cup fresh blueberries into the mixture, keeping them intact.
  5. Transfer to container: Spoon the mixture into a mason jar or airtight container. Press down lightly to remove air pockets, then seal tightly.
  6. Refrigerate overnight: Place the jar in the fridge for at least 6 hours, preferably overnight.
  7. Serve and enjoy: Stir gently before serving. Add a splash of milk if too thick. Top with extra blueberries or lemon zest if desired.

Notes

Use Fage Greek yogurt and Breakstone’s small curd cottage cheese for best texture. For dairy-free, substitute with thick coconut yogurt and add vegan protein powder. Do not skip lemon zest for brightness. Be gentle folding in blueberries to keep them intact. If oats are watery in the morning, stir well or add more yogurt. Store leftovers up to 3 days in fridge. Reheat for 30 seconds if preferred warm.
