  • 1 can (15 oz or 425g) pumpkin puree (100% pure, not pie filling)
  • 2 large eggs, room temperature
  • 1 cup (240ml) milk (dairy or plant-based)
  • ¼ cup (60ml) pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup chopped pecans or walnuts (optional)
  • ¼ cup chocolate chips (optional)
  • ¼ cup dried cranberries (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish with butter, coconut oil, or non-stick spray.
  2. In a large mixing bowl, whisk together eggs, pumpkin puree, milk, maple syrup, and vanilla extract until smooth.
  3. Add pumpkin pie spice, cinnamon, baking powder, and salt. Whisk until fully incorporated.
  4. Fold in rolled oats until every oat is coated. Let the mixture rest for 5 minutes.
  5. If using mix-ins (pecans, chocolate chips, dried cranberries), fold them in gently.
  6. Pour mixture into prepared baking dish and spread evenly. Tap dish on counter to settle.
  7. Optional: Sprinkle extra cinnamon and a handful of pecan halves on top.
  8. Bake for 30-35 minutes, until top is golden brown and center is set but slightly jiggly (like cheesecake). A toothpick inserted in center should come out with a few moist crumbs.
  9. Let cool for 10 minutes before serving.

Notes

Don’t skip the 5-minute resting time after mixing oats—it prevents a dry top and soupy bottom. Use room temperature eggs for smoother mixing. Oven temperatures vary; check at 25 minutes if your oven runs hot. For meal prep, let cool completely before refrigerating. Freezes well for up to 3 months.
