  • 1 small yellow onion, finely diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder

  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 1 large head butter lettuce (or romaine hearts)
  • 1 medium avocado, diced
  • ½ cup fresh pico de gallo
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • ¼ cup crumbled cotija cheese (optional)
  • Hot sauce to taste

Instructions

  1. Prep your lettuce — Carefully separate 8-10 large leaves from the head of butter lettuce. Rinse them gently under cool water and pat completely dry with paper towels. Set them aside on a plate.
  2. Mix your spice blend — In a small bowl, combine the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Give it a quick stir.
  3. Heat your skillet — Place your skillet over medium-high heat and add the olive oil. Let it heat for about 30 seconds until it shimmers.
  4. Cook the aromatics — Add the diced onion and cook for 2-3 minutes, stirring occasionally, until it becomes translucent and starts to brown at the edges. Add the minced garlic and cook for another 30 seconds until fragrant.
  5. Brown the turkey — Add the ground turkey to the skillet. Break it up with your wooden spoon into small crumbles. Let it cook undisturbed for 2 minutes to get a nice sear, then start stirring. Continue cooking for 5-6 minutes until the turkey is fully cooked and starting to brown in spots.
  6. Add the spices — Sprinkle your prepared spice blend over the cooked turkey. Stir well to coat every piece. Let it cook for 1 minute to toast the spices.
  7. Build the sauce — Add the tomato paste and stir it in, cooking for another minute. Then pour in the chicken broth and apple cider vinegar. Stir everything together, scraping up any browned bits from the bottom of the pan.
  8. Simmer — Reduce the heat to medium-low and let the mixture simmer for 3-4 minutes until most of the liquid has evaporated and the filling is thick and saucy.
  9. Rest the filling — Remove the skillet from heat and let it sit for 2 minutes.
  10. Assemble the wraps — Lay your lettuce leaves on a serving platter. Spoon about 2-3 tablespoons of the turkey filling into the center of each leaf. Top with diced avocado, pico de gallo, a sprinkle of cilantro, and a squeeze of fresh lime juice. Add cotija cheese and hot sauce if using.
  11. Serve immediately — These are best eaten right away while the lettuce is still crisp and the filling is warm.

Notes

Don’t skip the browning step for the turkey — it adds flavor. Toast the spices for 1 minute before adding liquid to enhance their aroma. Keep lettuce completely dry to prevent sogginess.
